Healthy Plant-Based Mini Potato Kettle Chips

I was born an raised in Idaho, so you better believe that every time someone asks me for my favorite food I emphatically (and honestly) answer, “potatoes!” They really are the best food! Especially while transitioning to a plant-based diet, potatoes became a life-saver. They are filling, cheap, quick, versatile, and so so healthy for you! They are often underrated and given a bad rap because people do not think they are healthy. However, this is because they are usually deep fried or served with foods high in saturated fat. But they don’t need to be!
These “kettle” chips (not really made in a kettle or in a huge puddle of oil) are one of my favorites! They are so quick and tasty, and the perfect companion to any plant – based burger, hot dog, or just in a bowl by themselves when you need a late night snack. Mini Potatoes: You can honestly use any kind of potato. I really like this “little co” variety pack of mini potatoes, because the different kinds of potatoes add that much more flavor. I always buy my mini potatoes from Walmart or Sam’s Club, because I like using grocery pickup to save time! However, you can get the biggest bang for your buck if you buy them from Sam’s Club or Costco because they offer the biggest bag for the lowest price (both offer them for about the same price, but again, Sam’s Club club offers grocery pickup!)
Slicing your potatoes: The first time I made these, I painstakingly used a knife. While it worked just fine, this mandoline slicer became worth the buy just to make these chips (not to mention – worth it for every meal I make since eating plant-based means chopping veggies for the majority of your meal prep. Time saved is money earned! This slicer is worth every penny!)
Olive oil Spritzer: I love this olive oil spritzer! It makes it so much easier to spray a little bit of olive oil to help give the potatoes a little crunch without giving too many empty calories.
Himalayan Salt: I don’t know why this himalayan salt tastes better than normal sea salt, but just trust me that it does!
Recipe:
- Mini potatoes
- Olive oil (optional)
- Himalayan salt (Regular sea salt, seasoning salt, and cajun seasoning are also really good!)
Instructions:
Thinly slice mini potatoes. Lay flat in air fryer so none of the potato slices are overlapping (or oven if you do not have an air fryer). Spray lightly with olive oil and sprinkle with sea salt. Bake at 400 for 8 minutes. (If you are using an oven you may need to bake for longer and flip the chips halfway through).
