The Story Behind This Fresh Peach Pie Trifle
If there is one dessert that tastes like peach season to me, it is fresh peach pie.
My Aunt Janet makes fresh peach pie every peach season for all those in her circle who are lucky enough to get one. The first time I tried it, I was blown away. It truly was the best peach pie I had ever had in my life.
What really surprised me was how much of a difference it made to use fresh peaches instead of cooked peaches. I had always thought of peach pie as having a traditional cooked fruit filling, but the fresh peaches completely changed it for me. They are so refreshing and flavorful, and you still get all of that sweet, juicy peach flavor without cooking away the freshness. I honestly couldn’t believe this wasn’t the more common way to make a peach pie!
Making fresh peach pie has since become one of my own favorite peach-season traditions So when I was invited to a dinner party a couple weeks ago, I wanted everyone to get a taste of Aunt Janet’s fresh peach pie! There was just one problem: I knew one peach pie wasn’t going to be enough for the whole crowd.
And thus, this Fresh Peach Pie Trifle was born.
It has everything I love about fresh peach pie—juicy fresh peaches, fresh whipped cream (updated from the original pie recipe with a few new ingredients), and that graham cracker crust flavor—but instead of making a pie crust, I simply layered in cinnamon graham crackers.
Cinnamon graham crackers are loosely crumbled and layered with a fluffy whipped cream filling and plenty of fresh peaches. After a few hours in the refrigerator, the graham crackers soak up some of the cream and fresh peach juices and soften into the layers.
It’s simple, fresh, feeds a crowd, and might just be one of my new favorite ways to use fresh peaches. And the flavor is different enough from the pie that now I will have to make Fresh Peach Pie Trifle, AND my Aunt Janet’s Fresh Peach Pie every season. Oh darn.

- The cinnamon graham crackers are so good with the peaches. You can absolutely use regular graham crackers, but that little bit of cinnamon pairs perfectly with fresh peaches.
Fresh Peach Pie Trifle Recipe
Ingredients
Whipped Cream Layer
- 8 oz cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 2 cups heavy whipping cream
- 1 tsp vanilla extract
- ¼ tsp salt
Fresh Peach Layer
- 8–10 ripe fresh peaches
- Juice of 1 lemon
Graham Cracker Layer
- About 1 ½ packages cinnamon graham crackers, loosely crumbled
Regular graham crackers can be substituted for cinnamon graham crackers.
Instructions
- Blanch the peaches. Bring a large pot of water to a boil and prepare a large bowl of ice water. Using a paring knife, cut a shallow X into the bottom of each peach. Carefully lower the peaches into the boiling water and blanch for about 45 seconds.
- Peel and dice the peaches. Immediately transfer the peaches from the boiling water into the ice bath. Once they’re cool enough to handle, peel away the skins starting at the X—they should slip off easily. Dice the peeled peaches and place them in a bowl.
- Add the lemon juice. Squeeze the juice of one whole lemon over the diced peaches and gently toss to coat. The lemon juice helps keep the fresh peaches from browning while also adding a bright, fresh flavor that complements their sweetness.
- Start the whipped cream layer. In a large bowl, beat the softened cream cheese, sweetened condensed milk, vanilla extract, and salt, until completely smooth.
- Whip the cream. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
- Finish the whipped cream layer. Gently fold the whipped cream into the cream cheese mixture until evenly combined and fluffy.
- Assemble the trifle. Cover the bottom of your trifle dish with broken cinnamon graham crackers. (Don’t crush them into fine crumbs—you want rough pieces that will create distinct layers and soften as the trifle chills.) Top with a layer of the whipped cream mixture, followed by a layer of fresh peaches. Repeat until you’ve used all of the ingredients, finishing with fresh peaches on top.
- Chill. Cover and refrigerate for 2–4 hours before serving. This gives the graham crackers time to absorb some of the moisture from the cream and peaches and soften without becoming too soggy.
- Serve cold and enjoy!
Why Blanch the Peaches?
Blanching sounds fancy, but it’s really just a quick trick for peeling fresh peaches without having to painstakingly remove the skin with a knife or vegetable peeler.
Cut a small X into the bottom of each peach, place it in boiling water for about 45 seconds, and then immediately transfer it to an ice bath. The heat loosens the skin, while the ice bath stops the cooking process so you still get that fresh peach texture and flavor we’re after.
Once cooled, the skins should slip right off.
Can I Use Regular Graham Crackers?
Absolutely! I use cinnamon graham crackers because I love the little bit of warm cinnamon flavor with the fresh peaches, but regular honey graham crackers will taste amazing as well.
Can I Make Fresh Peach Pie Trifle Ahead of Time?
Yes! In fact, this is a great dessert to prep ahead if you’re taking it to a party or serving it to a crowd.
For the best texture, I recommend assembling the trifle about 2–4 hours before you plan to serve it. That gives the graham crackers enough time to soak up some of the cream and fresh peach juices and soften without becoming overly soggy.
If you want to get most of the work out of the way earlier, you can prepare all three layers ahead of time and store them separately. Then, 2–4 hours before your event, simply layer the graham crackers, whipped cream mixture, and peaches in your trifle dish and place it in the refrigerator to chill until serving.
Leftovers are still delicious the next day, but keep in mind that the graham cracker layers will continue to soften the longer they sit.
How Do I Know When My Peaches Are Ripe?
This dessert is only as good as the peaches you put into it, so you want to use ripe, juicy peaches.
Look for peaches that smell sweet and give slightly when you gently press them. You don’t want them rock hard, but you also don’t want them so soft that they’re mushy or gritty when you cut them.
If your peaches aren’t quite ready yet, leave them on the counter for another day or two before making the trifle.
The Perfect Dessert for Peach Season
There are plenty of desserts you can make any time of year, but I think part of the magic of this one is that you can’t.
It’s a dessert for that little window of time when peaches are perfectly ripe, juicy, and sweet.
